In Thailand, traditional food can be exquisite and elaborate. Nothing epitomizes this more than the use of tian op, Thailand’s culinary candle.
Though its name simply means “scented candle” in Thai, this double-wicked curl of beeswax is no ordinary room freshener. Tian op is a flavoring agent, or rather, a scenting agent, used to enhance specific dishes in Thai cuisine.
Chefs light the U-shaped candle at both ends, place it on top of the food to be scented, and cover it with a lid. Lack of oxygen snuffs the flames and the enclosed space fills with flowery smoke. Minutes or even hours later, the chefs lift the lid and serve the food, now garnished with the candle’s delectable aroma.
Tian op is infused with numerous ingredients also found in perfume and incense, like patchouli, ylang-ylang, mace oil, sandalwood, frankincense, and musk, to name just a few. The candle’s smoke contains a complex blend of scent molecules, including vanillin, named for vanilla but also found in woodsmoke.
This gives the scent of tian op a unique, musky sweetness which lends itself especially well to desserts. “It’s very, very distinct, very recognized,” says Thai cookbook author Leela Punyaratabandhu. “For me, traditional Thai desserts don’t taste the same, basically, unless they smell like the candle.”
In some recipes, tian op is a finishing touch, as with flower-shaped kleeb lamduan cookies, which are infused with smoke after baking. Other preparations call for ingredients to be individually smoked, such as sarim, which combines smoked sweetened coconut milk with multicolored starch noodles and crushed ice.
Though nearly all traditional applications of the tian op are for sweets, the candle is also used to make khao chae or “soaked rice,” a cold dish popular in the summertime. Chefs smoke rice with a tian op, then chill it in jasmine-scented water to provide fragrant refreshment between bites of crispy side dishes. “This candle is part of the bigger picture of Thais liking to scent things,” says Punyaratabandhu. Though chefs around the world use aromatics to infuse food, Thai cuisine has a particular appreciation for fragrance. Especially prized are fragrant ingredients like the herb pandan, which owes its nutty, roasty aroma to a flavor compound shared with jasmine rice.
Tian op isn’t even the only form of enclosed smoking used to aromatize food in Thailand. There’s also dhungar, a technique of sizzling ghee on hot charcoal in a closed oven, which is particularly associated with the cuisine of Thai Muslims. Though dhungar and tian op are superficially similar, Punyaratabandhu, who has written on both, believes that they are unrelated. Dhungar is primarily used for savory dishes, not sweet, and while dhungar originated in India and is found in other South Asian countries, tian op is unique to Thailand.
Tian op’s spectacular blend of aromatics carries, for Punyaratabandhu, “the scent of home, of tradition—of something that is dying these days.” Originally derived from the exclusive cuisine of the Thai royal court, tian op is still largely the provenance of professional dessert-makers, rather than home cooks. Those dessert-makers now have the task of preserving a tradition that is at risk of disappearing due to decreasing demand.
Traditional Thai sweets are fading in popularity, in the face of competition from foreign desserts like macarons and cupcakes, which are sometimes more affordable than the labor-intensive traditional options. And as Thai desserts go, so goes the tian op. Punyaratabandhu describes the candle as a “uni-tasker,” intimately tied to the purpose it was made for. “The candle doesn’t have a life outside of this,” she says. “We have to talk about it as a subset of what's going on with traditional Thai desserts.”
Yet while globalization threatens tian op’s original context, it also presents new opportunities. Modern Thai chefs have created fusion recipes with tian op, scenting Western-style cookies, cakes, and pastries. New York City’s Spot Dessert Bar formerly offered a candle-infused cheesecake, the brainchild of consulting chef Ian Chalermkittichai. In 2023, the show-stopping signature dessert at San Francisco restaurant Prik Hom earned its own profile in the San Francisco Chronicle: coconut ice cream smoked with a tian op for 15 seconds under glass. It’s served with the lid on, so that diners can release the sweet smoke themselves.
Punyaratabandhu cautions that because the scent of tian op is so specific, it doesn’t necessarily improve every dessert. When she used the candle on shortbread cookies, she didn’t like how it masked their original scent. “You're supposed to smell butter, not frankincense!” she says.
Like any flavoring, tian op’s power to elevate and transform must be used with care. But it’s a testament to the allure of this royal ingredient that chefs, in Thailand and beyond, are still drawn to experiment with its fragrant smoke.

Top 10 Most Underrated K-pop Songs of 2019 (Artist Edition)

2019 has come and gone before we knew it.  
Continuing with the K-Pop Timeout Tradition (see 2018 Ver) of listing the Top 10 Most Underrated K-Pop Songs because all the other sites are just bothered with the Top 10 that pretty much everyone will have heard of/have fan wars over, below are our top 10 picks of songs that did not rank high (and with MVs just around or below 1 million views too) but deserves your attention! 
This is the list for artists’ tracks, so the Top 10 underrated non-idol tracks. Click here for the Top 10 underrated idol tracks of 2019. Unlike usual years where there is a separate post made for Top 10 underrated K-Drama OSTs, this year there is instead posts for the Top 20 most underrated K-Pop songs of the decade.
Some of the non-idol artists have escaped the list in recent years to stardom (for example DPR LIVE, CRUSH and MAD CLOWN) so hopefully, it happens again!
This is in alphabetic order NOT in the order of awesomeness because all of them are awesome. Also, all MVs are linked in the song titles because Tumblr won’t let me share that many videos in one post.
ADOY “Lemon”

It is strange that this song somehow did not make ADOY more well-known in South Korea and among K-Pop fans. They have such a laid-back and fresh sound perfect for CFs and fan edits but somehow this indie electronic rock band still only has 9609 likes on Facebook and their song “LEMON”, has less than 200K views at the point of writing this. “LEMON” is a refreshing and soothing indie rock track with an 80s synth melody loop. It is basically if ice lemon tea was a song and it was a great song. If you like chill 80s-inspired music, you would love ADOY’s “Lemon”!
Colde “Control Me”

One half of RnB duo offonoff and a member of DEAN, Crush and Punchnello and more’s artist collective Club Eskimo, Colde provides an amazing solo song in the form of “Control Me”. The song is a smooth RnB track that hits all the right spots - the somewhat conversational like singing building up to the chorus, and the chorus itself which is extremely catchy. Colde’s rapping is also just as fire as his singing. The MV only just surpassed 1 million views but it really deserves so much more since it complements the song so well, with everything filmed like it was done in one shot as different versions of Colde appear to serenade you on the screen. If you are already a fan of DEAN and Crush, you should also check out this amazing song by their friend Colde!
Crispy Chae “A letter from Wendy” ft. Gato Ray

With how popular lofi study playlists are, it is surprising how little love Crispy Chae’s “A letter from Wendy” received because it would fit perfectly in such a playlist. Maybe it is because this song does not even have a proper MV besides the video made by Mellowbeat Seeker. However, this does not stop this song from being an extremely underrated quality indie track. Crispy Chae has a beautiful voice that is both husky and child-like at the same time, making the transitions between skilled harmonies and the conversational chorus all the more memorable. Additionally, this song was sung predominantly in English and should really be making more rounds in the increasingly global K-Pop fanbase. If you love Suran’s music, you would really enjoy this song by Crispy Chae!

City pop is definitely making its comeback in 2019, with Takeuchi Mariya’s “Plastic Love” finally getting its much deserved MV, western city pop acts like PREP gaining more popularity and veteran K-pop stars like Sunmi and Yubin trying out this sound. dosii, an R&B duo comprised of Choi Jonghyuk and Jeon Jihye, also dives into city pop in “lovememore.”, which is definitely one of the best and most underrated indie K-pop tracks of the year. The song sounded both like an authentic 80s city pop jam but also includes distortion effects and producing techniques used more often in current music. Honestly, it is an absolute masterpiece and the less than 800K views the MV has received since February is ridiculous.  If you loved Sunmi’s “Black Pearl”, you would fall in love with “lovememore.”!

While this song did only come out in early November, I am still confused why such a great hip-hop collaboration has less than 500K views. Like all GRAY involved works, this is classy and catchy. What makes this song stand out from a lot of great K-Hip Hop collaborations is the way ELO, PENOMECO and GRAY’s voices work together. They have three very distinctive vocal colours - ELO has an extremely melodic voice, PENOMECO has a breathy and high-pitched way of singing and rapping while GRAY’s tone is deep and relaxed. This makes for a very colourful and fun song. If you like a strong K-Hip Hop collaboration, “LOVE?” by ELO, PENOMECO and GRAY is the song for you!
Jung Jinwoo “Nowhere”

Ever since K-Pop Star Season 5, Jung Jinwoo has proven to be a phenomenal RnB singer-songwriter and have continued to improve after his signing to Planetarium Records. It is shocking that he and the other PLT boys are still relatively unknown, even though they have only dropped bops. His newest song “Nowhere” is arguably one of the best Korean RnB tracks of 2019 and showcases his further honed production and singing skills - his voice is super light, clear and smooth with a mild tinge of huskiness. Just 71K views for such a superb song makes no sense. If you are a fan of DEAN and Crush, you would be obsessed with this song!
LEEBADA “ㅎㅇ (High)” ft. PENOMECO

This is another K-RnB masterpiece that seemed to have completely flew under the radar to K-Pop fans. Playing on the Korean internet abbreviation for Hi (ㅎㅇ) and High, this song has classy drinks lounge music vibes but is also playful at the same time, fully showcasing LEEBADA’s high-pitched and airy vocals. PENOMECO’s addition in the song is perfect, as his voice and LEEBADA’s work together so well, like the male and female counterparts of the same singing style. If you are a huge fan of HEIZE’s music, you would really enjoy LEEBADA’s “ㅎㅇ (High)”! 
LIM KIM “YELLOW”

Back in 2015, every K-Pop fan knew Lim Kim for her quirky electro-pop sound as she dominated charts and was Mystic Entertainment’s it girl. However, her return after 4 years received little to no attention for unknown reasons. Not only is Lim Kim back but she returned stronger than ever, taking on a much more aggressive and edgy persona while singing and rapping about female empowerment and fighting against the objectification of Asian women. “YELLOW” combines traditional East Asian orchestral instrumentals with electronic beats and Lim Kim’s unique mixture of chanting, singing and rapping, creating a powerful anthem in the process. If you are a fan of Lim Kim from before or is a fan of artsy and experimental music in general with a strong message, you would love Lim Kim’s “YELLOW”!
PRIMARY “Bad High” ft. Jade

PRIMARY is definitely one of the best producers in K-Pop, with ground-breaking and beautiful collaborations with Zion.T, Hyukoh, Beenzino etc., oftentimes before the acts are even known in the mainstream. PRIMARY continues this in “Bad High”, working with Jade, the main vocalist of virtual girl band XGirls. This song is phenomenal not only because it sounds good, but also because it goes in directions you never expect it to go. Starting off, the song sounds like the emotional and slow-paced folk-pop/rock works of Lucid Fall and Hyukoh, then it switches up to a satisfying drop in the chorus, where the aggressive use of hi-hat loops changes the slow-paced song to an exciting ethereal art-pop sound of the likes of Grimes. The MV is also beautiful and unsettling simultaneously. Why this masterpiece has only 97K views at the time of writing this is beyond me when PRIMARY has so clearly outdone himself yet again. If you enjoy PRIMARY’s past works and also experimental art-pop, you would love “Bad High”!
RAD MUSEUM “Dancing In The Rain” ft. Jusén

After Hyukoh and Jannabi’s rise to the mainstream, one would expect more attention to be given to indie artists with unique vocals. However, RAD MUSEUM seemed to have flown under the radar even though the vocalist is all sorts of unique with his piercing and emotional vocals which seems to combine soul, alternative RnB, and indie rock all in one. Maybe it is the lack of an MV and big label promotions but this live performance video would show you the charms of this phenomenal artist who is also a part of Club Eskimo and his amazing song “Dancing In The Rain”. This song is simply art - it feels pop-rock like Sting’s “Shape of My Heart” but the way it is delivered also feels like soul and RnB. If you want to be blown away by talent, you should check out RAD MUSEUM’s “Dancing In The Rain”!

Frostiness was all you knew. Cold aura, snowy landscapes everywhere, crispy steps following you on the streets, and of course – your frozen heart. Stinging thoughts of I am worse than I supposed or it wasn’t worth it at all. Arctic loneliness in the storm of people, sweeping you under the wintry layers of dullness.
Perspectives of spring? Beyond zero.
- Good evening, I have some delivery for your guests!- the courier greeted your coworker, handing her some papers:- Can I leave it here?
- I’m not sure about it – she hesitated with signing the report, looking at you:- Y/N?
- That depends – you answered without excitement, scribbling pointless notes on housekeeping’s documents that you probably shouldn’t:- For whom is it?
- The package is addressed for a dietician company, their worker must be staying here – the man pointed to the big logo on the cardboard box:- As for these..
- Oh! I know! It’s for the new VIP!
This picked your interest.
On his other hand, the courier was balancing an impressive bouquet. There weren’t a lot of flowers, but the long-stem roses were always fancy. It suited the grand quality of the hotel without a doubt.
- He always leaves with flowers, such a gentleman – the colleague sighed dreamily:- I swear I saw his face somewhere.. well-mannered and good-looking, where can I find men like this?
- You don’t really know him – you pointed out, taking the documents from her to sign up. The delivery man chuckled with amusement, wiggling the bouquet before her eyes:
- Ah, so that’s all it takes to catch a young lady’s heart! Maybe I should visit with flowers next time!
- I am afraid our guest has more to offer than this, sir ..!
- Oh, so it’s about money, huh?
- What? I didn’t say that!
- Then what is it?
- You have to meet him to understand! It’s just something special about him..
- Pretty face, then? The young lady is pretty shallow, isn’t she?
- I-no! It’s not-I mean, he’s handsome, but.. wait, are you making fun of me, sir?
While the two exchanged playful banter, you examined the other package; it didn’t have any specific recipient. What a drag, now you will have to formulate some way to find the addressee. Here comes hours of boring deduction, another pile of paperwork, mails to the director’s office..
Or not; small, simple stamp at the bottom sorting out the problem.
- Okay, I will take both – not wasting time, you reached out to the courier, but your coworker interrupted:
- Wait, the roses too?
- Well, obviously.. – her sudden question irking you up, what’s up with all this interest out of blue:- Why would I go up and down when I can do it just once?
- Yeah, but.. you’re always doing everything, Y/N – well, no lie – You can stay, I can deliver it? I mean, flowers?
- Haha, of course, you want to do it – the carrier laughed, wiggling his eyebrows:- Hop into wedding dress along the way!
- Oh you, stop it!
What the hell, your icy ego puffed. Nobody asks questions about Chae’s bizarre reservation, all guests until now are your business, they flipped over your whole daily life, basic virtues, and played your self-esteem like some kind of psychotic game and now you’re supposed to drag another person into this? Good joke.
It’s not about the camaraderie, of course, you don’t give a damn about your coworkers. They could care less about you as well. But this is your reservation, your cursed responsibility; this silly girl doesn’t know what she’s talking about. Charming men? You know how appealing they can be, delightfully inviting – straight to hell.
- Whatever, I will do it – falsing nonchalance, you grabbed the roses and got out from behind the reception desk.
- Y/N, hey! Pretty please, can I do it?
- Geez, stay professional – rolling your eyes, both at her and the irony. The delivery man’s snickering drowned her complaints, but you decided to inform her anyway:
- Besides, I know for whom the other package is for!

It took you some time to get to the fourth floor since the elevator refused to cooperate. Weird, you saw the guests from 209 using it not even an hour ago. When you’ll come back you have to call the technician. Probably also the cleaning lady, the keypad close to grey instead of silver because of the solid dust layer.
Deciding to leave the package first, you knocked at the door with the number 405. Nobody answered after the first knocks, so you tried once more - without success. After a few minutes of standing like a bump, the situation was clear: the room was empty.
You speculated if it would be wise to just leave the box under the door, but decided against it. It was a VIP in the end. You sighed uneasily eyeing the TEAM WONHO imprint, not really looking forward to meeting the depressed athlete again. However deeply buried in numb slush you were, another burden wasn’t something you crave.
The bouquet then; the new reservation, just the next door.
Now you were sure the apartment was occupied. Small light under the entrance along with hushed TV indicated enough. Knocking again, you pondered who will answer. What kind of twisted secret will be hidden this time? How will I be broken for the nonce?
- Oh, hello!
I will be sweetly defeated.
The man standing in the doorway was young, his skin clear without any imperfections, and clothed in simple pants with a patterned blouse. It was evident you pulled him from some work – his hands stained with ink, he even was holding some letters. Despite being engrossed with his task, he didn’t waste time and answered you immediately without any nastiness.
Nonetheless what made you stupidly gawk at him was his hair – in the most wonderful light shade of pink. Someone could dare to call it baby pink, but such phrase was out of the question in the company of man’s long face and sharp nose. Longer strands peeked from behind ears, the ones at the top of a head tousled messily as if someone disarranged it in aggravation; probably the man himself.
What an odd color, you couldn’t help but judge. Such lunacy in grey dailiness.
He blinked at you unevenly, left eye first, right one second later.
Peculiar and cute – almost like an exotic plant in the winter season.
- I came-I mean, sorry to bother you, sir – with fair difficulty, you managed to take a grip of yourself and bow in greeting:- Y/N from reception, at your service, I have..
- Oh, Miss Y/N! – he smiled, face pleasantly gleaming:- It’s so nice to meet you finally!
No; he was fresh air, the first sign of spring.
- .. delivery for-excuse me? I-what do you mean? – similar joyous look took over your expression involuntarily. He was another Chae’s friend, which should alarm you, yet you felt his charms already working your mind.
- I heard so much about you! – he stated excitedly. These words presumably should worry you; instead, you felt delighted, all your layers melting under his sunny persona. You were the one he was waiting for – you, the shady receptionist with doubtful actions in her record.
Not your coworker, the cute girl all guests were always choosing to work with.
Hyungwon’s chuckle arose in the back of your mind, but before you could ponder on it, the stranger came closer to you. All your thoughts that started to flare were abruptly muffled.
- No words could describe you perfectly, though.. – he looked at you like you held all the stars in the sky, then giggled at his own words:- Ahaha, forgive me!
His attitude was unusual. Yes, your guests showed incomprehensible interest in you lately, but this man wore his heart on his sleeve. Such truthful eyes, sincere and full of curiosity – like a child were something new.
- Uh.. thank you, sir? – not sure what to say, you opted for polite gratitude. He shook his head with another laugh.
- I wanted to ask if you came to visit me, but I see you have something that belongs to me, yes?
- Oh! Yes, I believe it’s for you – stunned for a moment at the hint of so-called visit your voice lost its certainty. You handed the bouquet to the man; his smile changed to contemplative at the picture, the radiating positivity forgotten in a matter of seconds. A small gesture, yet enough to make your hair stood in the back of the neck in alarm.
His face changed entirely to grim melancholy. Eyes lost their sparkle, becoming flat and cold.
- Not exactly.. but yes, I’ll take it.
Deciding it’s your cue to leave, you bowed again and stepped towards the stairs. Sensing the change in the air all you wanted was to escape. Intuition was raising your already well-built anxiety. What were you thinking? That was expected, as all of them – men tainted with dark delusions. Just another one who will try to wriggle his way into your head.
- Thank you for the delivery, Miss Y/N! – he called after you, stopping your hasty departure. Whipping your head around, you spotted him still in the doorway. He buried his nose in the roses, inhaling the scent as if looking for some comfort. Exhaling, he opened his eyes to look in your direction, a small grimace that may once be a smile painting his lips.
- I hope we meet soon, whatever you’re ready of course.. since we are quite alike.
You froze motionless, both limbs and face paralyzed. This man was scaring you, his words were scaring you, his implications.. were terrifying you.
- Indeed.. we are. Until then, Miss – he nodded, without even blinking once:- Lee Minhyuk will be waiting for you patiently.
The silence after closing his doors was overwhelming, antagonistically loud in your ears. You clutched your chest, aware of the accelerated heartbeat all of sudden. The unnerving meeting left you startled, chills running down your spine.
He was surely the spring to you, tricky as it is – warming you in sunlight you longed for, then cooling in the wind that still smelled like winter.
Hyungwon did the same to you; he just was more pricky about it. More insults, less warmth. Wait, he said it too – that you’re both the same, which you proved right later on. It would mean a similar fate will be waiting for you one more time. One? Or repeatedly? Will your eyes become creepily dull like his? What exactly does it mean?
You forced your breathing to slow down, trying to crush panic hiding right behind your shoulders. Her unsteady hands clasping your elbows, arms, neck-
Ding, unanticipated strong sound signaled the arrival of the elevator. You looked in disbelief at the silver door at the end of the corridor, torn between inner confusion and incredulity at the machine that wasn’t working hardly a moment ago.
The metal gate opened exposing two men inside; one you already knew, the second unconscious hanging on his shoulder.
- Ah, Miss Y/N – abashed Mr. Hoseok welcomed you, clearly not expecting anyone. He stole a glance at his passed-out companion, then admitted:- Actually, I.. might need your help?

Cupbap Burger
The western portion of Robson Street has gone through a transformation of sorts over the years. From its humble beginnings as hub of German and European shops, to Japanese ones, and now Korean, it always seems to be a place of constant change. While walking near the Robson Public Market the other day, I came across Cupbap Burger, which, if memory recalled, had a short lived shop near the Law Courts on Hornby. Given how tastily pictured their food looked, and how reasonable the prices were, I decided a visit was merited!

To start, we have Bulgogi (8.99). The beef had a nice crispiness to some of the pieces, yet it was still juicy and had a subtle sweetness to it. The Jap Chae had an amazing chew and was very nicely flavoured!This dish also came with a decent amount of salad, a bed of rice, and some pickled daikon.

Next up, we have an order of Tteokbokki (8.99). Just as a heads up, this dish is S-P-I-C-Y !!!! It’s not even a slow burn, it’s just a tasty firestorm right off the bat. The rice cakes had a nice chewiness to them yet the cabbage had a nice crunch to contrast it. The whole thing tasted as if it had been stewing with the fish cakes for some time as that was the flavour that really came through (and it was amazing).

Lastly, weh ave an order of Kimbap (4.99). Each roll had quite a bit of rice and was packed/rolled nicely Each bite presented a nice crunch from the carrots and daikon, yet made creamy from the tofu! Very satisfying, yet light!
Good:
-Decent portion size and quality for the price
-Very friendly folks that run the place
-Despite presenting itself like a fast food shop, everything’s made to Order only once you order it!
Bad:
-Location is a bit of a pain to get to unless you’re already in the area.
Closing Comments: Very tasty Korean classics for a great price. They seem to do a great takeout business too!
Overall Rating: 8.8 PBJ’s out of a possible 10

Cambodian Sweet Soy Noodle Bowl Recipe
Cambodian Sweet Soy Noodle Bowl is the ultimate vegetarian noodle bowl (vegan adaptable), combining sweet, salty and sour flavors and crunchy, juicy and chewy textures. It’s a party in a bowl. I’m a sucker for Asian noodles of all kinds, from Vietnamese Pho to Chinese Dan Dan Mien, Korean Jap Chae and Cold Japanese Soba Noodles. So, when I spotted a recipe for Cambodian Sweet Soy Noodles with Pickles in Pat Tanumihardja’s Farm To Table Asian Secrets cookbook, I earmarked it to give it a try.
This Cambodian Sweet Soy Noodle Bowl make a delicious lunch or dinner idea (I even served it for breakfast to one of my sons). I have to admit I was hesitant to try this recipe at first due to the number of ingredients, but after taking a closer look, I realized most of the ingredients were already in my refrigerator or pantry. Plus, this is a flexible recipe. So if you don’t have preserved radishes, for example, just leave them out. Several of the ingredients such as assorted pickles and Broiled Tofu can be store-bought or you can make your own following the recipes in the cookbook.
You can also buy crispy garlic in some Asian grocery stores, or make Pat’s Microwaved Crispy Garlic Bits, which are genius! They add a unique crunchiness to the Cambodian Sweet Soy Noodle Bowl.
All the recipes in Farm To Table Asian Secrets are vegan or vegetarian, with a focus on seasonal ingredients. So, the recipes are divided into Spring, Summer, Autumn and Winter Recipes. Pat also provides seasonal variations on recipes and seasonal menu suggestions, to take advantage of produce at their peak. There is also a section entitled Basic Recipes, which is a gem. I would buy this book solely for all the homemade chili paste, vegan fish sauce, hoisin sauce and Indonesian peanut sauce recipes.
I’m looking forward to trying more seasonal recipes from Farm to Table Asian Secrets, especially during our farmer’s market season, including Vietnamese Noodle Salad Bowls, Mixed Vegetable Salad with Indonesian Peanut Sauce, Ice Cold Korean Buckwheat Noodles, and Burmese-Style Pumpkin and Parsnip Curry.
Back to this Cambodian Sweet Soy Noodle Bowl. This cool noodle bowl reminds me of pad thai because of the rice noodles, bean sprouts, crushed peanuts and lime. I made some quick vinegar cucumber pickles and Pat’s Broiled Tofu with hoisin sauce, as well as the Microwaved Garlic Bits. Fun to eat, and delicious, I encourage to give this recipe a try and check out Pat Tanumihardja’s Farm To Table Asian Secrets cookbook.
Cambodian Sweet Soy Noodle Bowl with Pickles
8 ounces dried thin rice noodles (banh pho)
3 tablespoons vegetable oil
2 large cloves garlic (smashed and peeled)
1/2 teaspoon fine sea salt
Sweet Soy Sauce
2 tablespoons soy sauce
1 tablespoon water
2 tablespoons coconut palm sugar or 1-1/2 tablespoons dark brown sugar
Toppings
1/2 cup assorted pickles (celery, fennel, cucumber)
8 ounces Broiled Tofu
2 cups bean sprouts (blanched for 30 seconds)
4 large hard boiled eggs (chopped)
2 tablespoons preserved radish (soaked, drained and chopped)
2 tablespoons Microwaved Crispy Garlic Bits
1/4 cup roasted peanuts (crushed)
Garnishes
2 tablespoons green onions (green parts only, chopped)
1 cup assorted herbs plucked from their stems (Thai or Italian basil, cilantro, parsley)
1 large lime (quartered)
soy sauce
chili paste such as sambal oelek
To make Sweet Soy Sauce, combine the soy sauce, water and palm sugar in a small microwave-safe bowl. Microwave on medium for 1 minute, then stir until the sugar dissolves.
Bring a large pot of water of water to a rolling boil. Submerge dried noodles in boiling water and turn off heat. Stir to loosen and unravel them. When noodles are completely limp, test for doneness. They should be cooked through but still al dente, 6-8 minutes. Pay attention, because they’ll turn mush if overcooked. Drain and rinse noodles under cold running water. Drain again in a colander over the sink to dry off the noodles as much as possible.
Swirl the oil into a large wok or skillet and set over medium heat until shimmering hot. Swish the garlic around in the oil until golden to flavor the oil, 4-5 minutes. Remove and discard.
Toss the cooked noodles in the oil for a few seconds, then pour the Sweet Soy Sauce over the noodles and toss until well coated. Sprinkle with the salt and mix well. Remove the noodles and toss until well coated. Sprinkle with the salt and mix well. Remove the noodles from the heat and divide among 4 large bowls. 
To serve, top each bowl of noodles with a fourth of the pickles, tofu, bean sprouts, eggs, preserved radish, Microwaved Crispy Garlic Bits and peanuts. Serve immediately with garnishes alongside in small dishes.
